12 ounces whole wheat penne (or other shape) pasta, dry
4 medium tomatoes, chopped or 1 lb. grape tomatoes
1/2 lb. fresh low-fat, mozzarella cheese, in1/2” cubes or fresh mozzarella “pearls”
1/3 cup fresh sweet basil, chopped
1/4 cup olive oil
1 tbsp. Italian seasoning
1 tbsp. balsamic vinegar
½ tsp. salt (optional)
Cook pasta al dente according to directions. Rinse with cold water and drain. Add tomatoes, cheese and sweet basil.
In a separate small bowl, combine oil, seasoning, vinegar and salt. Add to pasta mixture and chill
